Cheese Castelmagno Dop

This rare DOP cheese is made in only three small mountain towns in the province of Cuneo, comprising the Municipality of Castelmagno where it has been made since at least the 13th century. A document dating from 1277 makes note of rent paid to the Marquis of Saluzzo in Castelmagno cheese. The cheese is made from raw cow’s milk from two consecutive milkings to which small amounts of goat and sheep milk has been added. Aged in caves, the ivory pate may develop blue-green veins of mold during the aging process. With time, the texture becomes semi-hard and the flavosr deepen and become more intense.
