Made by La Bottera, this Piemontese cheese is made solely of alpine goat’s milk. Aged for approximately 8 weeks in a "crutin," or tuff cellar, the cheese develops a thin, blooming rind which lends an earthy note to the creamy, fresh-milk flavor.
