Description:
This semi-soft cheese made after an ancient Piemontese mountain recipe is made with a mix of cow and sheep milk. The cheese is solid and compact, matured for at least five months in the Valcasotto cellars and is covered with a thick crust of Barolo grape must which adds a fruity, yeasty quality.The milk comes from animals that freely roam the summer pastures.
