Description:
Artisan Caciocavallo, produced in various parts of Southern Italy, is documented as far back as the Middle Ages. The outer rind of the this cheese is hard and white to ivory in color while the body is golden yellow. The fresh product has a soft texture and soft aroma. If it has been aged for along time the flavor becomes tangy and the texture crumbly.
