Description:
This cheese has a celebrated history and is mentioned in documents dating from the kingdom of Naples. Made from predominately sheep milk, Filiano also contains goat’s milk which lends the cheese an added complexity. When young, the cheese is semi-firm and pliable with a slight sour tang. With age, Filiano becomes firmer, deeper in color and develops a strong, nutty earthy flavor and aroma.
