Description:
This sheep milk cheeses is made by Dorgali Pastori of Sardinia. Milk from native breeds is pasteurized to make this semi-cooked firm cheese. Aged a minimum of 90 days, the cheese is firm yet retains a creamy mouthfeel though it can be aged much longer. At two years, the cheese takes on a sharper flavor and a texture more suitable for grating.
