Made only from the milk of Valdostana cows, this DOP cheese from the Aosta Valley in NW Italy is one of the best known and most loved. The milk for this cheese must be raw and come from a single milking. During the initial aging, the cheeses are brushed with brine daily giving them the characteristic pungent orange rind. Once the rind has formed, they are aged in natural environments for a minimum of three months. The finished cheese is dense, and pungent with a sweet, earthy and mushroomy flavor. The moist texture makes it an excellent melting cheese as well as a fine table cheese.
