Traditionally, stracchino was made with milk of animals tired from trek down from their summer pastures. The classic version from Lombardy is made with raw goat’s milk and eaten while quite young. This version, however, is made from goat milk and aged for approximately three months bringing out a stronger character and more distinctive flavor.
