Description:
Meaning “round Stracchino”, this Lombardian cheese had almost disappeared from the Val Brembana by the 1970s. Due to the persistence of a single cheesemaker, this traditional cheese is finding favor once more. The milk of the local Bruno Alpina cows is mixed with curd from the previous evening adding complexity to the earthy cheese. After 40 days cheeses are pierced to allow the veining to develop during the aging which lasts a minimum of two months.
