Cheese Taleggio

Description:
This is the best-known cheese of Lombardy and one of Italy’s most celebrated. A wash-rind cheese, Taleggio is made from the milk of cows grazing in mountain pastures and is aged in the mountains as well. During its aging process which can last from 25-60 days, the cheeses are washed with brine to keep them moist and to encourage the growth of beneficial bacteria. The finished cheese is pungent and sweet with a velvety smooth texture. Guffanti's Valsassina Taleggio is produced in mountain areas and is aged in caverns. It is flat cheese, and has an aging period of more than two months which gives it its "soul".
