Description:
Before ready to be allowed on the market, the Traditional Balsamic
Vinegar from Modena, "White Cap" or "Vecchio" which means old, which it
is also called, is aged for at least 12 years.
The aging is done
in different kinds of wooden barrels, to give all the characteristics
that each "White Cap" production contains.
Once the balsamic has
reached the right quality level through aging in the special barrels,
it will be brought to be graded by some of the world's finest
connesseurs of balsamic vinegar at the "Consorzio dell'Aceto Balsamico
di Modena".
5 judges will here grade the balsamic and only if
the total score reaches high enough will the balsamic be bottled and
given the seal indicating "Traditional Balsamic Vinegar of Modena,
White Cap".
