Made with whole-cream cows milk, Blu al Vin Santo has a delicate flavor despite the internal marbling of blue noble molds. Aged for about 40 days, it is ripened in barrels of Vin Santo, a typical sweet wine from Toscana region, which gives it a distinctive aftertaste.
