Much like its relative, Brie de Meaux, Camembert must be made under strict, government regulations, ensuring that quality and flavor are never sacrificed. As with all of Rodolphe le Meunier's cheeese, extreme care is taken in honoring the time old traditions of cheesemaking, utilizing only the best ingredients in order to produce cheese leagues above the rest. And the Camembert is no exception. These 8oz wheels are the perfect for cheese for anyone looking for an added kick. Though the paste is mild, even taking on a creamy texture at times, the rind is punctuated by the classic flavors of white mushrooms, earth and a hint of bitterness.

 

Le Meunier is but a few affineurs in France that is adorned with the recognition of MOF, Meilleur Ouvrier de France, a prestigious award given only after passing a series of rigorous cheese oriented tests. This certification is worn with pride as a red, blue and white stripe along the collar of one's chef jacket.
