The name of this robust cheese translates to “sitting in the cellar” which it does, in the aging cellar of Käserei Tufertschwil, for 10 months. Cheesemaker Walter Rass is known for his Appenzeller, which serves as the inspiration for this fabulous cheese.

 

Washed with brine periodically through its aging, Challerhocker has a slightly tacky rind and a dense, smooth interior. Though firm, the cheese has a creamy feel on the palate. The flavors are complex with notes of butter, peanuts, roasted meat and herbs. While the cheese is powerful, the strong, salty edge is wonderfully balanced by the rich, creamy texture.
