Leave it to Canti come up with another beautiful, creative, artisan cheese using a traditional recipe with a modern twist. The Fior di Noce is a beautiful young pecorino, aged only a few months, that is covered in crushed walnut leaves. The leaves add a bit of moisture to the rind which helps to develop the interior paste. The flavors of this cheese are slightly nutty, with prominent walnut notes. The paste is a bit more metabolized towards the rind and smooth, with a flakier, drier interior. This cheese would do well with medium bodied red wines that will accentuate the nuttiness of this cheese.
