Pawlet by Consider Bardwell is made for the town in which their 300 acre farm resides: Pawlet, Vermont. A co-operative organization using both their own goat milk from their herd of Oberhaslis and milk from local Jersey Girl dairy, these artisan cheeses reflect the love and care put into each wheel by cheesemakers Angela Miller, Russell Glover and Chris Gray.  Pawlet is a raw cow's milk cheese, nutty and rustic, modeled after an Italian toma.  This versatile cheese is aged four to six months.
