Gineprino Pecorino is a cheese flavored with juniper : a plant that has literally and metaphorically its roots in the land of Tuscany. Its wood, burned for centuries to cook roasts of the ancestors; its berry, a spice that pervades many Tuscan recipes . And then, Canti's pecorino cheese: white, compact and fragrant, produced using traditional methods and aged in Arezzo, Tuscany . Maturation takes place right under the juniper berries, so the cheese is imbued with the juniper's aromas without losing its character. In order to preserve the berries over the crust , the cheese is wrapped in yellow paper.
