This unique cheese is a member of the “Quartirolo” family, a cheese traditionally made with milk from cows feeding on grass from the fourth growth known as the quartirolo. This special feed, cut during the early autumn, is richer in flavor and fragrance and lends these nuances to the finished cheese. The Salva takes its name from the Italian verb salvare meaning “to save”. After the dairies separated the cream used for butter making, rather than waste the excess milk they “saved” for cheesemaking. The resulting cheese is semi-firm and flaky with a wonderful tangy, milky flavor.
