Made from raw cow's milk, this variety has the same exterior and sensorial quality as any fine Taleggio DOP. Compact and uniform, the texture is much softer under the rind and crumbly in the middle, and the colour varies from white to straw-coloured. The rind is thin, soft and slightly pink in colour. The mild, buttery flavour is less pronounced in this variety, with softer hints of truffle and faint sour tones. This variety tends to be less pronounced and aromatic from a sensorial point of view, suiting all palates.
