Toma della Serra (Toma Fontinata)

Throughout Piemonte one can find several different cheeses called Toma. While they are all related, each will be distinctive based on local tradition. This version is a classic example of tomas made in the pre-alps of Biella in the area of Serra. Made only from the milk of pasture fed cows, the flavors of the cheese echo the herbaceous grasses on which the animals graze.
