Lodigiano, from where this cheese takes its name, is a commune, or municipality, in the Lombardian province of Lodi. The cheese is made in a style quite similar to Gorgonzola Piccante yet in a smaller cylindrical form. The texture is much like the more famous Gorgonzola yet the flavor is more reserved and more approachable. With its creamy mouth feel and balanced blue molds, the cheese is wonderful as a table cheese served simply with toasted nuts and honey. It is often used, however, in more dramatic preparations, rolled with sweet or passito wines into small truffles.
