This cow's milk cheese is washed with Barberosso red wine, which adds complexity and tartness to the richness of the full-fut milk. The supple paste of the cheese is evenly sprinkled with small holes from the aging process.  Originating from the Piedmont region of northern Italy, this cheese pairs beautifully with fruits, jams, white wine and light beers.
