The "Maxx 365" made by Kaeserei Studer from old and traditional methods. This is done with a lot of experience and intuition. Like the Scharfe Maxx, cream is added back into the milk as the curds are cooking, which in essences makes this cheese a "double creme". However, the Maxx 365 is then aged for a full year which make this is an especially spicy, high-quality cheese, which fits to a strong red wine.
