When one thinks of buffalo milk cheeses, thoughts immediately go to Campania and Mozzarella di Bufala. Yet the Casatica di Bufala, made near Bergamo, bucks tradition by using the rich milk up North.

Brothers Bruno and Alfio Gritti make this seductive cheese on the farm started by their father. Though the farm started off raising cattle for beef, they eventually switched to dairy cows and finally took the unconventional step to a buffalo dairy.

The Casatica is a gorgeous cheese. Under a thin bloomy rind you'll find a  creamy paste with a smooth and luscious texture. While mild, the cheese is sweet and rich with flavors of fresh cream and just a hint of the tang typical of buffalo milk cheeses.
