There are not many remaining farmstead goat dairies in California, but Nicolau Farms in Modesto is producing some amazing farmstead goat cheese. Milking 50 goats on over 125 acres, Walter and Elizabeth Nicolau use sustainable practice on their farm to ensure high quality milk and delicious cheese.


Quattro Pepi is a 4 lb drum of peppercorn studded goat cheese, lightly washed during its few months in the aging room to further develop flavors. The paste of this cheese is densely pressed and smooth, allowing the flavors and aromas of the four different types of peppercorn to ruminate the cheese, leaving an herbaceous, slightly peppery flavor throughout the paste. Pair this cheese with light, peppery, fruity red wine!
