Produced in an artisan cheese factory in Tuscany, Peperino cheese is aged to maturity then placed in whole peppercorns. While the rind is covered in peppercorns, inside the cheese is white. The pepper aroma imparts a marked but delicated flavor. To preserve the whole peppercorns around the rind the cheese is vacuum packed in a transparent cryovac bag or wrapped in yellow corn paper, according to client's preference.
