Made in Somerset by cheesemaker Pete Humphries, the Morn Dew is a raw cow's milk cheese. While most of the cheeses made on the White Lake farm come from goat's milk, Humphries does house a few Jersey cows. Known for milk high in butter fat, Jersey cow's make some of the best cheese. And the Morn Dew is no exception.

 

Once the cheese has aged to its desired ripeness, the paste is supple and springy and the rind boast a fiery red complexion. Flavors range from subtle earthy tones to a meaty finish.
