Asiago cheese is one of the most typical cheeses produced in the Veneto region. It was, and still is, the most popular and widely-used cheese in the DOP area where it is produced. Asiago can come in different ages, starting with a young, tangy, fresh cheese aged just a few months to a firm, nutty, salty cheese aged a year or more. Asiago has flavors reminiscent of Parmesan, nutty and sweet with notes of white pepper. Asiago is a great table cheese and can also be used to cook with as a grating cheese. Pair Asiago cheese with full bodied red wines.
