Though Coulommiers is not as widely known as its larger counterpart, Brie, it is purported to actually predate the original Brie production.  Much smaller in size, the Coulommiers is nuttier in flavor but still has the classic creamy yellow texture. The candidum rind takes on an earthy, white mushroom like flavor.
