Beautifully mild bloomy rind goat cheese from family-run Sergio Arrigoni cheesemakers in Lombardy, Northern Italia.  The mild, fuzzy white rind gives way to a bright white paste whichs ranges from springy when young to soft and spreadable with a bit of age.  This hardy little cheese ages gracefully and lacks the "goaty" or "barnyard" qualities associated with some goats' milk cheeses.  Indeed it is mild, slightly salty and a new customer favorite!
