A new Fresca Italia selection, Bergamino di Bufala with Black Truffles is an Italian cheese made from buffalo milk in the province of Bergamo, in Lombardy.

The domestic Water Buffalo (Bubalus bubalis) contributes a significant share of global milk production and is the major milk producing animal in many countries. Water buffalo milk contains higher levels of total solids, crude protein, fat, calcium, and phosphorus, and slightly higher content of lactose compared with those of cow milk. The high level of total solids makes Water Buffalo milk ideal for processing into beautiful dairy products such as cheese.

Water Buffalo are sensitive loving animals that respond to human touch and affection with equal affection. Water Buffalo produce less milk than cows - six or seven liters per day, in comparison to cow's 28 liters. To put that into perspective, it takes one liter of milk to make one 250-gram ball, the agricultural standard for Mozzarella di Bufala.

Bergamino is a soft cheese, with a buttery texture, a fresh milk flavor and a slightly tangy finish. Creamy, custard like with a white paste, Bergamino di Bufala is one of Fresca Italia's most popular cheeses. A worthy alternative for those who can't tolerate cow's milk.
