Le Jeune Autize is a relatively new addition to the French cheese repetoire. Made much in the same way as a Morbier, with a vegetable ash vein that cuts through the center of each wheel, Le Jeune Autize stands apart due to the fact that is made entirely of goat’s milk. Rather than the muddy, earthy quality often found in Morbier, le Jeune Autize offers a sweeter and lighter flavor. The paste is a stark white which is contrasted by the auburn, washed rind, of its exterior.

The wheels are aged  by famed affineur Rodolphe le Meunier.  Le Meunier  is but a few affineurs in France that is adorned with the recognition of MOF, Meilleur Ouvrier de France, a prestigious award given only after passing a series of rigorous cheese oriented tests. This certification is worn with pride as a red, blue and white stripe along the collar of one's chef jacket.

Le Jeune Autize is a small river that runs through the town in which these wheels are made.
