It belongs to a large family of cheeses flavored with herbs and spices that are traditionally referred to in Biella "MortarĂ t." The flat shape and grooved, which is reminiscent of an oyster, was born from the cloth in which the curd is squeezed by hand. The coating was not only for decorative purposes or gourmet, but it originally served also to facilitate the conservation of the cheese. The crust should not be eliminated, but rather consumed together with the cheese, which in this way is tasted the best of its flavor.
