Maggese is one of the newest cheeses to join our selection here at Fresca Italia, providing depth and variety to our selection of coated and covered cheeses. This raw goat's milk cheese is made in Bergamo by couple Valentina and Roberto - who went to great lengths to learn the craft of traditional cheesemaking techniques. Studying both in France and Italy, the two mastered the art form and dedicated their dairy - La Via Lattea (which means The Milky Way) - to producing only raw milk cheeses. Maggese conceals a semi soft, creamy goat’s milk paste in a blanket of nettles and flower petals.  Bright and earthy with a nod towards Spring and Summer.
