Similar to Taleggio in its appearance and flavor, we called Stracchino di Vedeseta the "king of Taleggios" because it is the forefather to the famous Italian washed-rind.  Made using raw milk at body temperature or "a munta calda" in Italian, this lovely Lombardian cheese retains all the flavor and complexity of the grass-fed raw cow's milk it is made from, with a funky fruitiness imparted by the washed rind.
