These petite cheddards are made on the grounds of Dorset Cheese Farm, located in Somerset, England. Directly on the coast, their heards of cows graze on grass allthewhile enjoying the sea mist airs. After being shaped in their 4 pound truckles, each wheel is wrapped using the traditional methods, using muslin. They are then transported to the caves of Wookey Hole, where they will age for up to 6 months, helping to develop this cheddar's funky, earthy quality.
