Raw milk
This raw goat's milk cheese is made in Bergamo by Valentina Cano, an adventurous cheesemaker who went to great lengths to learn the craft of traditional cheesemaking techniques. Studying both in France and Italy, she mastered the art form and dedicated her dairy - LaViaLattea to producing only raw milk cheeses.
The base of the Insonne – meaning “sleepless¨ - may take its inspiration from classic Lombardian cheeses like Taleggio but final product is anything but traditional. During the aging process the cheeses are coated with ground coffee and coffee liqueur making the perfect way to either start your day or finish a decadent meal.
