Pecorino Romano is the famous italian sheep's milk cheese, hard and salty, often used for grating.  Originally produced in the region of Lazio, close to Rome, most Pecorino Romano is now made on the island of Sardinia.  An important ingredient in Roman dishes like an amatriciana or carbonara, this sharp, piquant cheese has been an indelible facet of Roman cuisine for over two thousands years.
