This mixed milk cheese from the Langhe region of Piedmont is young and flavorful. Rocchetta has a soft bloomy rind that wrinkles increasingly as the cheese ripens. It gives off aromas of mushrooms, earth, and fresh cream. The texture is silky and fluffy in the center  and very creamy -- almost liquid -- directly under the rind. It tastes as creamy as it looks and will leave your mouth with a mellow tang.

Pair Rochetta with light-to-medium reds like Pinot Noir or a dry sparkling wine.
