Mr. Arturo Chiriboga is an Ecuadorian that mastered cheese making in France and then relocated to Germany where this cheese is made.

Arturo Chiriboga cranks out cheese 3-4 days a week, solo, and sells them in his attached storefront in Bavaria. The curds are hand ladled and after a week of aging he needles the wheels to allow air in. The exterior shows wide, firm tubes though inside the “blue” flavor is fairly mild with a rich fattiness (60%) that makes a dramatic explosion in the mouth. A favorite of the Chiribogas, Arturo yields to his family’s demand and holds a wheel back from every batch for them.
